Converting very long php array to much shorter json

Hi First - any help on this is greatly appreciated - have been banging my head against the wall for a while...

I am receiving a PHP array from a webservice (soap xml). From this array, I want to keep just a few tags and then convert it to json (see sample in the bottom).
